Featured Dishes – September – Mild to Hot

This month we are going to give you a range of dishes that will let you know what will suit your aptitude for spice. Our plan is to start very mild – and moving on to dishes with real heat about them – don’t forget though – intenseness of flavour is part of their history. For all these dishes the spices are carefully balanced – so depending on how much you like your food to tickle your tastebuds will affect how far down the list you want to go.

Amer Murgh (Mild)

A dish of creaminess and mildness – so much so that if it wasn’t for the pieces of chicken you may think it was a dessert! This dish is a delight of beautifully cooked chicken enveloped in a sauce that combines the tang and sweetness of fresh mango with cream. To this we add mild spice to complement the natural flavours of the dish without overwhelming them.

Shatkora Gosht (Medium)

A fantastically exotic dish featuring the rind of the Bengali Lemon (shatkora to the locals), the Thai curry favourite of kaffir lime leaves and then back to the Bengali theme with Bengal chillies. It sounds spicier than it is – and trust us – this fantastic lamb dish is medium spiced and perfect for it.

Lamb Jalfrezie (Hot)

The Jalfrezie is a very traditional dish where the intense spiciness was used to enhance left over meat. The method of cooking this dish in oil and spice creates a dish with less sauce than other curries – but with a richness of flavour that is hard to match. As we aren’t forced to resort to left overs in creating this dish – our expert chef takes the opportunity to slightly deviate from the dishes origins. Fine cuts of lamb are used to make this dish and then our version also has a more saucy feel with green peppers and onions.

North Indian Chilli Chicken (Hot)

Even a quick look at the ingredients for this dish will have most curry novices slightly unnerved as both garlic and fresh green chilli feature prominently. These crunchy bite size pieces of chilli and soft chunks of garlic are added to a special sauce to create the perfect habitat for lovely cubes of chicken freshly roasted in our tandoor.
